Fall Harvest Pasta Salad

For the Salad:

2 cups gluten free rotini pasta, raw

2 cups butternut squash, lower into 1⁄2” cubes

2 cups uncooked broccoli florets

2⁄3 cup dried cranberries

1⁄3 cup chopped pecans

4 oz feta cheese, crumbled

2-3 tsp olive oil

1⁄2 tsp salt

For the Dressing:

2 Tbsp olive oil

2 Tbsp maple syrup

1 Tbsp Apple Cider Vinegar

1 tsp dijon mustard

Pinch of salt, or extra to style

1/8 tsp freshly cracked pepper

Directions:
